SLOW FOOD YUCATAN
The international Slow Food movement started in Italy over 20 years ago as an initiative to enhance the enjoyment of food, while at the same time supporting and maintaining local farming, artisanal production and regional culinary traditions. In 2009, Chef David Sterling launched the regional chapter of the organization, known as Slow Food Yucatán. In this tasting adventure that encapsulates Slow Food principles, we will visit small producers* of everything from rum and chocolates, to herbs, honey and chicharrón (fried pig skin).We will finish with a meal at a localcocina económica – small, owner-run restaurants that often operate in the front rooms of family homes. Join us as we savor the very best of authentic regional Yucatecan foods, while also supporting the Slow Food cause. *NOTE: We will visit 3-4 producers; exact destinations may vary according to season and availability. 8:00am - 2:00pm*. Minimum class size: Groups of 2 or more
